Edge grain gets unfairly overshadowed by end grain in the cutting board conversation. The truth is edge grain is what most professional kitchens actually use — and for good reason. The long face of the wood grain runs across the surface, creating a board that’s exceptionally strong, highly resistant to warping, easier to maintain, and in many cases more visually striking than its end grain counterpart.

 

Where end grain shows the cross-section of the wood, edge grain shows the full length of the grain pattern — the sweeping lines, the figure, the color transitions that make each species unique. A piece of highly figured walnut or a dramatic black limba and maple combination hits differently in edge grain. You see the wood the way it grows, not the way it’s cut. For a lot of people, that’s the board they fall in love with.

 

Edge grain also tends to be more forgiving in daily use. It’s slightly more resistant to moisture absorption, easier to flatten if needed, and maintains its surface integrity beautifully over years of heavy cooking. This is the board you reach for every single day without thinking twice — and it still looks incredible doing it.

 

At 1.75 to 2.25 inches thick, every Ember Ridge edge grain board has the same weight and substance as our end grain builds. No lightweight boards, no cutting corners on thickness. Every board goes through the same 7 day proprietary food safe oil and wax finishing process that brings out the full depth and natural color of the wood.
